MY BEST WHEAT BREAD 
1 1/2 c. water
1 c. creamed cottage cheese
1/2 c. honey
1/4 c. butter
5 1/2 to 6 c. all-purpose flour
1 c. whole wheat flour
2 tbsp. sugar
3 tsp. salt
2 pkgs. active dry yeast
1 egg
1/2 c. wheat germ (optional)

Heat first 4 ingredients until very warm (120 to 130 degrees). Blend with 2 cups flour, whole wheat flour, wheat germ, sugar, salt, yeast and egg. Beat 2 minutes on medium speed. By hand add remaining flour, knead until smooth and elastic (2 minutes).

Place in greased bowl, turn greased side up. Cover. Let rise 60 minutes.

Grease 2 (9x5 or 8x4) pans. Punch down dough, divide and shape into 2 loaves. Cover in pans for 60 minutes. Bake at 350 degrees for 40 to 60 minutes. Brush tops with butter when warm.
