APPLE BREAD 
8 tbsp. unsalted butter
1 c. light honey
2 eggs
1 c. ground cooking apples
2 c. whole wheat pastry flour
1 1/2 tsp. baking soda
1 1/2 tbsp. sour cream
1/2 c. chopped walnuts or pecans
1 tsp. grated orange rind
1 tsp. vanilla extract

Place unpeeled, cored apples in fine meat grinder or food processor. Process until fine. Preheat oven to 350 degrees.

Oil an 8-inch loaf pan (1 1/2 quart capacity); line with waxed paper and oil paper lining, then dust lightly with flour.

In mixer, cream butter until light and fluffy; add honey and beat again. Add unbeaten eggs and mix; then add apples.

In separate bowl, sift flour with soda; add flour mixture gradually to apple mixture, beating briefly after each addition.

Add sour cream, nuts, orange rind and vanilla. Mix only until batter is well blended.

Pour batter into loaf pan and bake 50-60 minutes or until to rebounds to touch. Turn apple bread out of pan immediately and peel off waxed paper.
