BLENDER PINEAPPLE SHERBET 
2 eggs, separated
18 sugar substitutes
1 can crushed pineapple in own juice
2 tbsp. lemon juice
2 c. buttermilk
1 tsp. unflavored gelatin
1 tbsp. water

Combine egg yolks, sugar, pineapple including juice, lemon juice, and buttermilk in a blender. Blend well. Soften gelatin in water in a small saucepan over low heat until dissolved. Add this to the blender mixture and blend. Place the mixture in ice trays and freeze. When frozen place in the blender. Blend and serve.
