PINEAPPLE SHERBET II 
2 c. water
1 c. sugar
1 c. pineapple juice
2 egg whites
3 tbsp. lemon juice
Mint leaves

Boil sugar, water and pineapple juice for 10 minutes. Add mint leaves and let cool. Pour in freezing tray and freeze until mushy. Fold in beaten egg whites and freeze. Add a few drops of green fruit coloring.
