MARSHMALLOW SWEET POTATOES | |
4-5 med. sweet potatoes (or 40 oz. can yams) 1/2 butter 1/2 c. dark brown sugar 1 1/2 c. evaporated milk 1 c. raisins (optional) 2-3 tsp. cinnamon (to taste) 1/4 tsp. ground cloves 1/2 tsp. nutmeg 1 1/2 tsp. vanilla extract Marshmallows to cover top of potatoes Boil potatoes until well done and soft. Remove skin. If using canned yams, drain - may want to save some of juice to add to potatoes (optional). Mash potatoes well with potato masher or mixer. Blend in butter and brown sugar; add raisins, spices and flavoring. Mix well to smooth consistency. Turn into 1 1/2 quart casserole dish greased with butter. Bake at 350 degrees for 25 minutes. Cover potatoes with marshmallows. Bake for 10 minutes at 450 degrees until light brown. |
