LOW FAT "SOUR CREAM" 
1/3 c. fat free liquid skim milk or buttermilk
1 tsp. lemon juice
1/4 tsp. salt substitute
1 (8 oz.) cup plain cottage cheese

Place all ingredients in container of electric blender. Blend until completely smooth. Refrigerate. Mix with you own blend of herbs and spices. Use for dip on top of fruit; season with chives or onions and serve over vegetables or baked potato. Makes 1 1/3 cups.

I use buttermilk, only because we like buttermilk and usually have it on hand.
