BROCCOLI AND CAULIFLOWER
CASSEROLE
 
1 bunch broccoli and 1 head cauliflower
1 stick butter (1/2 c.)
2 c. uncooked Minute Rice
3 cans cream of mushroom soup
16 oz. pkg. Velveeta cheese

Stream vegetables until partly cooked but still firm. After steamed put vegetables in 9 x 13 inch casserole dish or pan. Cut stick of butter into pats and place on top of vegetables. Add uncooked rice and mushroom soup. Mix lightly. Cut Velveeta cheese into pats and place on top.

Bake at 350 degrees for 30 to 45 minutes. While baking, stir a few times to make sure rice cooks thoroughly.

NOTE: Either broccoli or cauliflower may be used instead of combining them. Also, cream of celery or cream of chicken soup may be used as part of soup.
