CHICKEN CASSEROLE 
8 pieces of chicken
Lg. bag frozen cauliflower
Lg. head broccoli
6 carrots
1 can French fried onions
1/2 lb. Velveeta cheese
2 cream of potato or celery soup
Rolls or croissants
Salt and pepper

Cook chicken and cut into pieces. Parboil cauliflower, broccoli, and carrots. Make a layer of chicken, cauliflower, broccoli, and carrots, cheese, then canned onions. Pour soup with some broth over all. Bake at 350 degrees for 1/2 hour. Top with slices of croissants. Bake 12-15 minutes more. Serve over rice.
