MIMI'S ITALIAN ZUCCHINI 
4 fresh zucchini, sliced
1 c. shredded cheddar cheese
1 (8 oz.) can tomato sauce
4 slices toasted bread, broken up
1 tbsp. oregano
1 clove garlic, minced
1/4 c. chopped white onion
Parmesan cheese

Place zucchini in boiling water or vegetable steamer until al dente (still has its crispness). Drain. Place in pan with tomato sauce, onions, garlic and oregano. Slowly add cheddar cheese, stirring until soft, but not totally melted. Add pieces of broken toast at last minute so the toast is not soggy. Serve with Parmesan.
