COUSIN EVELYN'S MARYLAND CRAB
CAKES
 
1 lb. fresh crabmeat, picked, drained, flaked
1/2-3/4 c. mayonnaise
1/2 c. fine dry bread crumbs
1 egg, beaten
1 tsp. prepared mustard
3/4-1 tsp. white pepper (optional)
1/4 tsp. parsley flakes
Pinch of salt

Combine all ingredients; stir well. Shape mixture into patties. Fry in deep hot oil (can use skillet) 375 degrees until patties are golden brown. Drain on paper towels. Makes 10 (2 inch) patties.
