BANANA PUFFS 
8 bananas

pastry:
2 c. flour
Pinch of salt
1/2 c. butter
Cold water

SAUCE:

1/2 c. sugar
1 tbsp. flour
1/8 tsp. salt
1 c. boiling water
Juice of 1 lemon
Grated rind of 1/2 lemon
1 1/2 tbsp. butter
3 tbsp. raisins

1. Sift flour and salt into a mixing bowl. Rub in butter with your fingertips until mixture is like fine bread crumbs. Add enough water to make a firm dough. Chill. Roll out to a thickness of 1/8".

2. Peel bananas and roll in sugar and cinnamon. Wrap in pastry pinching the edges together. Bake in a 450 degree oven for 15 minutes.

3. In the top of a double boiler mix together the sugar, flour, salt and water. Cook over simmering water for 10 minutes. Add lemon juice, lemon rind, butter and raisins and mix well.

4. Pour hot sauce over the pastry wrapped bananas. Serves 8.
