SALMON LOAF 
1 (15 1/2 oz.) can salmon
1 beaten egg
4 soda crackers, crushed
1 tbsp. butter
2 tbsp. crushed potato chips
Salt & pepper to taste

Place salmon in mixing bowl (remove the bones and skin, discard). Add beaten egg, crackers, salt and pepper; mix well.

Butter a loaf baking pan. Preheat oven to 350 degrees. Put salmon mixture in greased pan, sprinkle the top with crushed potato chips. Bake for 25 to 30 minutes, or until salmon shrinks from sides of pan and is slightly browned. Serves 4.
