JAN'S SCALLOPED CORN 
1/2 green pepper
1/2 onion, finely chopped
2 tbsp. butter
Pinch of cayenne pepper
2 tbsp. flour
1 tsp. salt
1/4 tsp. paprika
1/4 tsp. mustard
1 c. milk
1/2 c. dried bread, broken
1 tbsp. butter
2 c. whole kernel corn
1 egg
1/2 c. buttered saltine cracker crumbs

Cook pepper and onion in butter for 5 minutes. Add flour mixed with seasonings and stir until well blended. Add milk gradually, blend and bring to boiling point. Brown bread in 1 tablespoon butter and add with corn and egg to milk mixture. Turn into greased baking dish, cover with saltine crumbs and bake at 400 degrees until crumbs are brown, about 20 minutes. Yields 6 servings.
