NORTH CAROLINA SQUASH CASSEROLE 
1/2 c. grated cheese
4 c. sliced squash
1 c. chopped onion
1 c. chopped pepper
1/2 stick butter
1/2 c. coarsely crushed crackers
2 lightly beaten eggs
Salt & pepper to taste

Steam squash, onion and pepper to desired doneness. Don't overcook. Stir in butter, crackers, eggs, salt and pepper. Place in buttered 1 quart baking dish. Sprinkle with grated cheese. Bake uncoverd 375 degrees for 40 minutes. Serves 4.
