NEW ORLEANS FRENCH BREAD
2 tbsp. shortening
1 tbsp. sugar
1 tbsp. salt
1 c. boiling water
1 pkg. dry yeast
1 c. cold water
5 1/2 - 6 c. flour
Egg White Glaze

EGG WHITE GLAZE:

1 egg white
2 tbsp. water

In a large bowl: Combine sugar, salt and boiling water. Add cold water and cool to 105 degrees. Sprinkle yeast over mixture. Let stand 5 minutes.

Gradually beat in 4 cups flour. Add enough of remaining flour to make a stiff dough. Knead until smooth. Place in a well greased bowl. Let rise until doubled (1 - 1 1/2 hours). Punch down and let rise 30 minutes more.

Turn onto floured surface and knead slightly. Shape into a 14-16 inch tube shape. Place on a baking sheet. Let rise until doubled. Cut 1/4 inch slashes in the top. Brush with egg white glaze. Bake at 350 degrees for 40-50 minutes. Cool on wire rack.

If you make this on Saturday, your family will still enjoy it on Sunday if you're lucky to still have some left.

If your kids watch cartoons on Saturday morning, you can easily make this by yourself. If they don't, they can help you and it will take a little longer.
