BROWN BEEF SOUP STOCK | |
1 1/2 lbs. lean beef, cut into 1 inch cubes 1 tbsp. cooking oil 6 c. water 1/2 c. diced onion 1/4 c. diced carrots 1 sm. bay leaf (remove this after boiling) 1 1/2 tbsp. salt 1/8 tsp. pepper 1/4 c. chopped celery 1 tsp. parsley flakes 1/2 c. chopped celery Heat cooker, add oil and brown beef. Add water and bring to a boil. Skim off fat. Add remaining ingredients. Close cover securely. Place pressure regulator on vent pipe and COOK 15 MINUTES with pressure regulator rocking slowly. Let pressure drop of its own accord. Clarify liquid. 4-6 servings. DELICIOUS SOUPS FROM BROWN BEEF SOUP STOCK: Vegetable soup - Add 4 cups cooked diced vegetables of your choice. Salt and pepper to taste and heat through. Beef tomato soup - Add 2 cups tomato juice, 1 chopped onion, 1 cup rice and 1 teaspoon salt. Close cover securely. Place pressure regulator on vent pipe and cook until pressure regulator attains a rocking action only. Let pressure drop of its own accord. |
