APRICOT BARS | |
1/2 lb. apricots 2 tbsp. flour or cornstarch 1/2 c. sugar 1/2 c. water 1 c. shortening 1 c. brown sugar 2 eggs 1/2 c. nuts 1 3/4 c. flour 1/2 tsp. salt 1 tsp. baking soda in 1 tbsp. hot water Cook first four ingredients until thick; put aside and cool. Cream shortening, brown sugar, and eggs. Add flour, salt, and soda together. Mix all together. Spread 1/2 of flour batter in greased 9 x 13 inch pan; spread apricot mixture over and sprinkle nuts on top. Spread remaining batter around as good as you can on top of nuts and apricots. Bake at 350 degrees for 35 minutes. |
