APRICOT BARS 
2/3 c. dried apricots
1/2 c. soft butter
1/4 c. granulated sugar
1 1/3 c. sifted flour (plain)
1/2 tsp. baking powder
1/4 tsp. salt
2 eggs
1 c. brown sugar
1/2 tsp. vanilla
1/2 c. chopped nuts
XXXX sugar

Rinse apricots, cover with water and boil 10 minutes. Drain, cool and chop. Set aside.

Heat oven to 350 degrees, grease an 8"x8"x2" pan. Mix butter, white sugar and 1 cup flour until crumbly. Pack into pan and bake for 25 minutes. While this bakes, sift 1/3 cup flour, baking powder and salt. Beat eggs and add brown sugar. Beat well until mixed. Add flour mixture, vanilla, nuts and apricots to egg-sugar mixture. Spread over baked layer. Bake 30 minutes. Cool in pan. Cut into squares and roll in XXXX sugar. This makes a good care package for college kids.
