MRS. S.'S APRICOT BARS 
1 c. unsalted butter
3 egg yolks
2 tbsp. liquid sweetener
2 c. flour
1/2 c. chopped nuts
1 tsp. vanilla
1/2 c. dietetic apricot jelly

Combine butter, egg yolks, artificial sweetener, flour, nuts and vanilla.

Mix well to form ball. Divide dough to make 2 balls and chill overnight, or place in freezer 2 hours or until firm.

Let cool, then cut into 2-inch squares. Makes about 24 squares.

NOTE: Two tablespoons liquid sweetener is equivalent to a scant 1/2 cup sugar.
