DIA'S RED VELVET CAKE 
2 1/2 c. flour
1 1/2 c. sugar
1 tsp. baking soda
2 c. Wesson oil
2 eggs, well beaten
2 oz. red food coloring
1 tsp. red vinegar
1 tsp. salt
2 tsp. cocoa
1 c. buttermilk
1 tsp. vanilla flavoring

Add all ingredients together at one time except flour. Beat with mixer until velvety. Then add flour, beating until thoroughly blended. Divide cake evenly into 3 cake pans. Bake at 350 degrees. Cake is done when center springs back when touched lightly.

ICING:

1 (8 oz.) pkg. cream cheese
1 box confectioners sugar
1 stick butter
1 c. pecans

Cream cheese and butter until smooth. Gradually add sugar until creamy. Add pecans last.
