RED VELVET CAKE 
1 1/2 c. sugar
3 eggs
1 c. buttermilk
1 c. Wesson oil
2 oz. red food coloring
1/2 tsp. baking soda
2 1/2 c. self-rising flour

Cream sugar and egg. Add Wesson oil, food coloring then buttermilk. Sift soda in with flour. Add this to your liquid. Bake in 3 layer, cake pan until done at 250 degrees, 1 hour and 15 minutes.

ICING FOR CAKE:

1 lg. cream cheese
1 stick butter
1 tsp. vanilla
1 box confectioners' sugar
1 c. nuts

Cream cheese and butter (soft). Add sugar and vanilla until mixture is smooth. Spread on each layer and top with nuts.
