RED VELVET CAKE 
1 1/2 c. white sugar
3 eggs
1 1/3 c. Wesson oil
1 c. buttermilk
1 tsp. baking soda
1 tbsp. vanilla
1 bottle red food coloring
2 1/2 c. self-rising flour

Preheat oven to 350 degrees. Mix sugar and eggs together; add other ingredients. Mix well with electric beater. Pour batter into 3 greased and floured 9-inch round cake pans. Bake for 20-25 minutes; cool in pan 10 minutes. Remove from pans; cool.

ICING:

1 (8 oz.) pkg. cream cheese, softened
1 stick butter, softened
1 box powdered sugar (confectioners)
1 tsp. vanilla
1 c. chopped nuts (pecans)

Cream first 4 ingredients together with electric mixer on low. Stir in pecans and frost cake.
