PUMPKIN STREUSEL MUFFINS 
1 egg, beaten
1/2 c. milk
1/2 c. canned pumpkin
1/3 c. oil
1 3/4 c. all-purpose flour
1/2 c. sugar
3 tsp. baking powder
1/2-1 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. nutmeg
3 oz. pkg. cream cheese

Preheat oven to 400 degrees. Grease only bottoms of muffin pan or paper baking cups. In medium bowl, combine egg, milk, pumpkin and oil; mix well. Spoon flour into measuring cup and level off. Stir in flour, sugar, baking powder, cinnamon, salt and nutmeg. Mix until dry ingredients are moistened. Batter will be lumpy. Fill cups half full. Divide cream cheese into equal parts (12). Place on batter of each cup. Sprinkle topping on each muffin. Bake at 400 degrees for 18 or 20 minutes.

TOPPING:

1/4 c. packed brown sugar
1/2 tsp. cinnamon
1 tbsp. butter
1/4 c. finely chopped nuts

Combine and mix well.
