FLOUNDER AU GRATIN 
1 lg. flounder (about 2 1/2 lb.)
Salt
Juice of lemon or bottle lemon
1/4 c. fine dry bread crumbs
1/4 c. shredded cheese
3 tbsp. butter
1/2 c. minced onions

Clean fish thoroughly. Lay fish (split) in greased shallow baking dish. Cover with bread crumbs, cheese and lumps of butter and minced onion. Bake at 375 degrees for 35 to 45 minutes or until fish flakes easily. Baste from time to time with juices in pan.
