FLOUNDER FLORENTINE 
1 (10 oz.) pkg. chopped spinach
Salt, pepper
1 tbsp. butter
1 (12 oz.) pkg. flounder fillet
1/2 c. undiluted evaporated milk
1 c. shredded sharp Cheddar cheese
1/4 tsp. Worcestershire sauce
1/2 tsp. dry mustard
Dash of nutmeg

Preheat oven 375 degrees. Cook spinach according to directions. Season with salt, pepper and butter. Arrange fish and spinach in greased baking dish. Cover with milk, Worcestershire sauce, mustard and nutmeg. Cover with cheese and bake 25 minutes.
