FLORENTINE MANICOTTI 
1/2 c. chopped onion
1 tbsp. butter
1 lb. ricotta or cottage cheese
1 (4 oz.) pkg. natural low moisture part-skim Mozzarella cheese
1/2 c. grated Parmesan or Romano cheese
1 tbsp. lemon juice
Dash of pepper
1 (16 oz.) jar spaghetti sauce
1 garlic clove, minced
2 (10 oz.) pkg. frozen chopped spinach, cooked and well drained
3 eggs, slightly beaten
1 tsp. salt
12 lg. manicotti noodles, cooked and drained

Saute onion and garlic in butter until tender. Combine sauteed vegetables, spinach, cheeses, eggs, lemon juice, salt, and pepper. Mix well. Fill noodles with spinach mixture. Place in a 9x13 inch baking dish. Cover. Bake at 350 degrees for 40 minutes. Heat spaghetti sauce. Pour over noodles. Sprinkle with additional Parmesan cheese, if desired. 6 servings.
