FLORENTINE MANICOTTI 
1/2 c. onion, chopped
1 clove garlic, minced
1 tbsp. butter
2 (10 oz.) frozen chopped spinach, cooked, well-drained
1 lb. cottage cheese
1 (4 oz.) pkg. Mozzarella cheese, shredded
1/2 c. grated Parmesan cheese
3 eggs, slightly beaten
1 tbsp. lemon juice
1 tsp. salt
Dash pepper
12 manicotti noodles, cooked and drained
1 recipe no-meat spaghetti sauce (may use one 16 ounce jar)

Saute' onion and garlic in butter until tender. Combine sauteed vegetables, spinach, cheeses, eggs, lemon juice, salt and pepper; mix well.

Fill noodles with spinach mixture; place in 13 x 9 x 2 inch baking dish. Cover; bake at 350 degrees for 40 minutes.

Heat spaghetti sauce, pour over noodles. Sprinkle with Parmesan cheese. Yield: 6 servings.
