6 flounder fillets
1 pkg. Monterey Jack cheese
1 sleeve Ritz crackers
1/4 lb. butter
2 pkg. creamed spinach

Dice Monterey Jack cheese. Chop or grate Ritz crackers to crumbs. Boil spinach. Strain liquid from creamed spinach.

In a casserole, spread creamed spinach. Place fillets on top. Add cracker crumbs. Place pats of butter on top of crumbs. Spread diced cheese. Bake at 350 degrees for 15 minutes or until golden on top. Easy. Serve with boiled potato and salad.
