FLOUNDER DIVAN 
2 lbs. flounder fillets
2 (10 oz.) pkgs. broccoli spears
2 tbsp. lemon juice
Pepper and salt
2 tbsp. Swiss cheese, grated
Cheese Sauce (below)

Cook broccoli until almost tender in lightly salted water, drain and arrange broccoli in a buttered 9x13 baking dish. Brush fillets with lemon juice, sprinkle with salt and pepper and place on top of broccoli. Pour cheese sauce over fish and sprinkle with grated cheese. Bake at 375 degrees for 20 to 25 minutes or until fish flakes easily.

CHEESE SAUCE:

1/4 c. butter
1 c. onion, chopped
1/4 c. flour
1/2 tsp. salt
Dash pepper and nutmeg
2 c. milk
1 egg yolk
1/2 c. Swiss cheese, grated

Saute onions in butter until soft. Add flour, cook 1 minute, stirring constantly, remove from heat and stir in salt, pepper and nutmeg. Add milk gradually, stirring thoroughly until mixture is smooth. Return to heat and simmer 3 minutes, stirring constantly. In a small bowl, beat egg yolk with a fork, beat into hot cream sauce and add cheese. Heat, stirring constantly, until cheese is melted.
