SAUSAGE UPSIDE DOWN CORNBREAD 
1 lb. bulk pork sausage
1 c. chopped onion
1/3 c. chopped green pepper
2 tbsp. flour
1 (6 oz.) can tomato paste
1 tsp. salt
1/4 tsp. pepper
1 tsp. chili powder
4 oz. cheddar cheese, shredded or cut in 1/2" cubes
1 c. ripe olives, pitted
2 (8 1/2 oz.) pkgs. corn muffin mix

Preheat oven to 400 degrees.

Cook sausage, onion and pepper in skillet until light brown. Stir in flour. Mix in tomato paste, salt, pepper and chili powder. Remove from heat, stir in cheese and olives. Spread evenly over 9" square pan. Prepare muffin mix according to package. Spread over sausage mixture. Bake 30 to 35 minutes. Let stand in pan 5 minutes. Loosen edges. Invert onto platter. Serve immediately.
