CHICKEN - WILD RICE CASSEROLE 
4 half chicken breasts, skinless
1 pkg. UNCLE BEN'S® long grain and wild rice
1 med. onion, chopped
1 med. green pepper (or 1 med. sweet red pepper)
1 (10 oz.) can drained and sliced water chestnuts
1 c. mayonnaise (I like Hellmann's Light)
4 oz. shredded Cheddar cheese

Simmer chicken until tender, and when cool cut from bones and chop. cook long grain and wild rice according to package directions. Spoon rice into lightly greased 8 inch baking dish. Combine chicken and remaining ingredients, except cheese. Spoon this over rice. Bake uncovered at 350 degrees for 30 minutes. Sprinkle with cheese and return to oven for 5 minutes or until cheese melts.
