CASTLE FAMILY BANANA CAKE 
1/2 c. shortening
1 c. ripe bananas, mashed
2 c. sifted flour
1/4 c. sour milk
1 tsp. baking powder
1/2 c. chopped nuts dredged in sm. amt. flour
1 1/2 c. sugar
1 tsp. salt
1 tsp. baking soda
2 tsp. vanilla
3 eggs, divided

Use 3 bowls. Sift flour, baking powder, soda and salt together. Set aside.

Beat egg whites until stiff, fold in 1/2 c. sugar. Set aside.

Cream shortening, remaining sugar (1 cup), add bananas. Add egg yolks, one at a time. Add vanilla. Alternately add milk and flour mixture. Add dredged nuts. Fold in egg whites. Pour into greased and floured 9 x 13 or 3 (8 inch) layer pans. Bake 30 to 40 minutes until top springs back at 350 degrees. Let cool and frost with 7 Minute Frosting or your choice.

This is a must have at all family gatherings for over 50 years.
