BROCCOLI-RICE CASSEROLE 
1 3/4 c. instant uncooked rice
1 lb. processed cheese spread
1 lg. onion, chopped
2 (10 oz.) pkgs. chopped frozen broccoli, thawed
2 cans cream of mushroom or chicken soup
1/2 c. butter
Salt & pepper to taste

Melt cheese and butter over low heat. Stir in onion. Mix with rice, soup and broccoli in 3 quart baking dish. Season with salt and pepper. Bake 1 hour at 350 degrees. Serves 8.
