PECAN & APPLE TORTE 
2 eggs
1 1/2 c. sugar
1 1/4 c. sifted cake flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1 c. pared & sliced apples
1 c. chopped pecans
1 tsp. vanilla

Beat egg until well blended with sugar. Sift dry ingredients and add to sugar mixture. Fold in apples, nuts and vanilla. Bake in half full pan as this tends to rise while baking. Use paper lined 8"x8"x2" pan and bake at 350 degrees for 45 minutes. Top with whipped cream. Serves 6 to 8.
