CHICKEN-ZUCCHINI PARMIGIANA 
3 cloves garlic
2 tbsp. oil
2 chicken breasts
1/2 tsp. salt
1/4 tsp. pepper
3 med. zucchini, sliced thin
1/2 tsp. thyme
4 oz. grated Mozzarella
1/2 c. spaghetti sauce

In a large skillet, saute garlic in oil until golden - discard garlic. Skin, bone and halve the chicken breasts. Saute chicken 8 minutes or until browned. Remove from pan and sprinkle with 1/4 tsp. salt, 1/8 tsp. pepper. Add zucchini, thyme, 1/4 tsp. salt, 1/8 tsp. pepper.

Cook and stir for 5 minutes or until crisp tender. Push to sides. Arrange chicken in middle of skillet. Top with cheese, then sauce. Cover and cook 3 minutes or until cheese is melted and sauce is hot. Serves 4.
