APPLE STREUSEL MUFFINS 
1 1/2 c. sifted flour
1/4 c. sugar
2 tsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. salt
1/8 tsp. nutmeg
1 c. apple, shredded
1/2 c. milk
1/4 c. vegetable oil
1 egg, beaten

STREUSEL TOPPING:

1/3 c. packed brown sugar
2 tbsp. flour
1/2 tsp. cinnamon
2 tbsp. butter
1/3 c. chopped pecans

In a small bowl mix together brown sugar, flour and cinnamon. Cut in butter until crumbly. Stir in chopped pecans; set aside.

Into medium bowl sift together flour, sugar, baking powder, cinnamon, salt and nutmeg. Stir in apples. In small bowl, mix together milk, oil and egg until blended. Add to dry ingredients, stir just until moistened. Spoon half of the batter into 12 paper lined muffin pan cups. Sprinkle with half of the topping. Top with remaining batter and topping. Bake in 400 degree oven for 20 to 25 minutes. Serve warm. Makes 12 muffins.
