BAKED ZUCCHINI CASSEROLE 
1 1/2 lb. zucchini
1 1/2 c. fresh bread crumbs
3/4 c. Cheddar cheese, grated
1/4 c. minced onion
2 tbsp. parsley
2 tbsp. butter
1 1/4 tsp. salt
1/8 tsp. pepper
2 eggs, beaten

Slice zucchini, cook in salt water for 5-7 minutes. Drain and add rest of ingredients, except butter and 1/4 cup cheese. Place in 2-quart casserole dish. Dot with butter, sprinkle with cheese and bake uncovered for 30 minutes at 350 degrees or until browned on top.
