ZUCCHINI CASSEROLE BAKE | |
4 eggs (egg substitute can be used) 1 lg. onion, chopped 1/2 c. grated Parmesan cheese 1/2 c. vegetable oil 1 c. buttermilk biscuit mix (or flour) 3 c. unpeeled, grated zucchini 1/2 tsp. dry parsley flakes Salt and pepper to taste In a large bowl, beat eggs, add onion, cheese, oil and biscuit mix and mix well. Add zucchini, parsley, salt and pepper. Grease a 10 inch pie plate or casserole dish. Pour in mixture and bake at 350 degrees for 30 to 45 minutes until golden brown. |
