BLACKEYE PEAS, SOUTHERN STYLE | |
2 c. dried blackeye peas 3 c. water 2 tbsp. bacon fat 1 tbsp. all purpose flour 1/2 tsp. salt 1/4 tsp. pepper 1/8 tsp. ground red pepper or cayenne 2 onions, minced Cover peas with water, bring to boil and boil for 2 minutes. Cover pan and let stand for 1 hour. Melt butter fat in deep skillet; stir in flour, seasonings and onions. Cook until onions are lightly browned. Pour bacon mixture into peas. Cover and cook over medium heat until peas are tender, about 1 hour. If necessary, add more water to keep peas from sticking. Makes four servings. |
