BLACKEYED PEA CASSEROLE | |
1 (16 oz.) can blackeyed peas or 2 c. cooked 1 lb. sausage 1 bell pepper, chopped 1 onion, chopped 2 c. tomatoes, canned 1/4 tsp. black pepper 1/4 tsp. oregano 1 c. grated cheese Salt to taste Cook sausage and brown on low heat (scramble), drain. Add onions and peppers to sausage, 2 cans tomatoes and peas and spices. Simmer for about 15 minutes or until onions and peppers are done. Pour into greased casserole. Add cheese on top. Bake at 350 degrees until cheese melts. Serve over cooked rice. |
