CHOCOLATE FILLING FOR CREAM
PUFFS
 
1 1/2 c. sugar
1/3 c. unsweetened cocoa
1/3 c. cornstarch
1/4 tsp. salt
3 c. milk
3 egg yolks, slightly beaten
2 tbsp. butter
1 1/4 tsp. vanilla extract

Combine sugar, cocoa and cornstarch and salt in heavy pan. Stir in milk. Cook over medium heat, stirring constantly until mixture boils. Boil and stir one minute. Cool, fill puffs and glaze.

GLAZE:

2 tbsp. butter
2 tbsp. unsweetened cocoa
2 tbsp. water
1 c. confectioners' sugar
1/2 tsp. vanilla

Mix all ingredients well. Drizzle over cream puffs.
