STRAWBERRY FILLING FOR CREAM
PUFFS
 
1 recipe basic cream puffs
2 pints strawberries
4 tbsp. powdered sugar, divided
2 c. heavy cream

Prepare cream puffs as above. Let cool. Wash and hull strawberries; let dry on paper towels. Reserve a few for garnish. slice into a medium size bowl; stir in 2 tablespoons powdered sugar. Chill 30 minutes. Beat cream with remaining 2 tablespoons powdered sugar in a medium size bowl. Chill. Just before serving, cut top off of each puff; remove any soft filaments of dough. Fold berries into cream; spoon into puffs, dividing evenly; replace tops. Sprinkle with powdered sugar over tops. Arrange on serving plate; garnish with reserved strawberries and green leaves, if desired.
