RICE PILAF 
1 1/2 tbsp. olive oil (2 tsp. butter)
1/2 c. chopped onions
1 c. rice
2 c. chicken broth

Stir onions in saucepan until soft. Add rice. Stir until gold - yellow. Add warm chicken broth (careful of splatters) ! Cover. Simmer until soft, 20 to 30 minutes.
