BREAD 
9 1/2 c. (3 lbs.) flour
1 tbsp. (1/2 oz.) salt
3 tbsp. (1 1/2 oz.) sugar
1/4 c. (1 1/2 oz.) shortening
3 c. (1 c. 8 oz.) water
3 cubes (1 1/2 oz.) yeast

Put flour, salt, sugar and shortening in mixing bowl. Dissolve yeast in lukewarm water. Add water and yeast solution, mix until fairly smooth. Let set 2 hours in warm place covered with towel. Punch down and let set 1 hour longer, covered with towel. Scale in 9 ounce pieces kneedit into balls and let set 20 minutes or double in size (covered). Then roll out into round strips, about 10 inches long. Roll in milk, then in sesame seed and let set about 30 minutes in warm place (covered). Bake in preheated 425 degree oven with steam for 30 minutes. Brush with melted butter while hot. Makes 4 loaves.

To form steam in oven, place pans of water in oven.
