GERMAN APPLE PANCAKES | |
5 apples, cored, peeled and sliced 13 tbsp. butter (much too much), divided - need 3 tbsp. for dough 3 tbsp. sugar 1 1/2 tbsp. cinnamon 1 1/3 c. flour 1 1/3 c. milk 2/3 c. sugar 8 eggs Preheat oven 400 degrees. Saute apples in butter (I use about 3 tablespoons butter) until they are tender. Place them in bottom of 9x13 inch pan. Mix together 3 tablespoons sugar and cinnamon - again way too much so I just sprinkle the apples with my own mixture of cinnamon and sugar as to what I think is enough. In a blender, food processor or by hand, mix 3 tablespoons melted butter with the dry ingredients and eggs. Pour over apples and bake for 20- 25 minutes. Remove from oven, dot with additional butter, sugar and cinnamon if desired; then bake 5 minutes more. It should be puffed and golden. Serve warm. Optional to serve with maple syrup or fruit jam. Serves 8. (I don't add any more butter or sugar mixture; find the apples are enough flavor; have only halved the recipe and two of us eat it all.) |
