CREAMY WILD RICE SOUP | |
2 c. cubed turkey 2 c. cooked wild rice 1/4 c. chopped onion 1/4 c. chopped celery 1/4 c. sliced fresh mushrooms (optional) 4 c. turkey or chicken broth 1/2 c. flour 6 tbsp. butter 1 c. half & half Saute onions, celery, and mushrooms in the butter. Blend in flour. Gradually add broth. Cook, stirring constantly, until mixture comes to a boil. Boil 1 minute. Stir in wild rice and turkey. Simmer about 5 minutes. Blend in enough half & half until soup is desired consistency. Season with salt to taste. Do not boil. |
