TURKEY WILD RICE SOUP 
3 (10 3/4 oz.) cans condensed chicken broth
2 c. water
1/2 c. uncooked wild rice, rinsed
1/2 c. finely chopped green onions
1/2 c. butter
3/4 c. all purpose flour
1/2 tsp. salt
1/4 tsp. poultry seasoning
1/8 tsp. pepper
2 c. half and half
1 1/2 c. cubed, cooked turkey or chicken
8 slices bacon, crisply cooked, crumbled
1 tbsp. chopped pimento
2-3 tbsp. dry sherry, if desired

In large saucepan, combine chicken broth and water. Add wild rice and onions. Bring to a boil. Reduce heat; cover and simmer 35-40 minutes or until rice is tender.

In medium saucepan, melt butter; stir in flour, salt, poultry seasoning and pepper. Cook 1 minute, stirring constantly, until smooth and bubbly. Gradually stir in half and half; cook until slightly thickened, stirring constantly. Slowly add half and half mixture into rice mixture, stirring constantly. Add remaining ingredients. Heat gently, stirring frequently. Do not boil. Garnish as desired. 8 servings.

TIP: Uncooked regular long grain rice can be substituted for part or all of the wild rice; reduce simmering time to 20-30 minutes or until rice is tender.

This is a recipe from an old Betty Crocker style next to the register recipe book! Absolutely delicious, grew up eating it after every Thanksgiving :)
