MAKE AHEAD POTATOES OR TWICE
BAKED POTATOES
 
5 lbs. potatoes or 9 lg.
2 tsp. onion salt
1/4 tsp. white pepper
1 c. sour cream
1 tsp. salt
2 tsp. butter
1 pkg. cream cheese (8 oz. or 2 sm.)

Boil potatoes or bake in microwave, skin and mash and mix with all other ingredients. Put in casserole and bake 30 minutes or bake potato in skin until tender. Cut in half lengthwise, scoop out and mash. Add other ingredients and fill potato skin. Sprinkle with paprika or bacon bits and cheese is good too. Keeps in refrigerator 2 weeks. Nice to fix ahead for company.

Since microwave ovens vary in power, you may need to adjust your cooking time.
