ZUCCHINI NUT BREAD 
3 eggs
1 c. oil
2 c. sugar
2 c. grated zucchini
3 tsp. vanilla
1 tsp. salt
3 tsp. cinnamon
1 tsp. baking soda
1/4 tsp. baking soda
1 c. nuts, chopped
3 c. flour

Beat eggs until foamy. Add oil, sugar, grated zucchini and vanilla. Add dry ingredients and nuts; mix well. Turn into 2 loaf pans. Bake in preheated oven for 1 hour at 350 degrees.
