ZUCCHINI-NUT BREAD 
3 eggs
1 c. vegetable oil
2 1/4 c. sugar
2 c. grated zucchini
1/4 tsp. walnut flavoring
1 tbsp. vanilla
3 c. all-purpose flour
1 tbsp. ground cinnamon
1 1/4 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
1 c. chopped walnuts

Beat eggs well; add next 5 ingredients. Mix well. Combine dry ingredients; add to egg mixture, stirring only until moistened. Fold in nuts. Spoon batter into 3 well-greased and floured 9 x 5 x 3 inch loaf pans.

Bake at 350 degrees for 1 hour or until brown or loaf tests done.
